I’ve been dreaming about making this for a while. Whenever I go out to breakfast I always order whatever I can get on the menu that has bananas. There is something so tasty about fresh bananas with warm, fluffy breakfast foods. I asked myself, “Why NOT add a little salty bacon?” So I did.
Oh also, I use Bisquick for my pancakes, but you can feel free to use ANY pancake recipe or mix for this. It won’t make any difference.
Before I share this recipe with you, I’ve got some personal news! I’m heading to West Virginia this weekend. My boyfriend got a job at WVU and we are going to try to bang-out 7 apartment viewings in about 8 hours on Saturday. Wish me luck, I’m going to need it! Any maybe some tequila…
Now for the recipe!
Banana Bacon Pancakes Recipe:
2 over-ripe bananas
2 cups Bisquick
2 eggs
1 cup milk
2 tsp. Vanilla
1.5 Tbsp. vegetable oil
8 slices bacon – cooked until ALMOST crispy
First, mash up your bananas using a fork in the bottom of your batter bowl.
Next, add your Bisquick, milk and eggs and mix until there are no banana or Bisquick lumps left.
Stir in your vanilla and vegetable oil.
Next, chop up 5 of your bacon slices and add that to the batter.
Make sure your griddle is hot enough, but not over hot. My dad taught me a trick. Let your griddle warm up on medium-high-ish heat and then use your hand to flick a little water on the pan. If the water droplets dance around, it’s perfect. If it just sits there, turn the heat up a bit. If the water just fizzles away on contact, turn that sucker down!
Brown your pancakes on each side – mine usually take about 1 minute per side.
Chop up some fresh bananas and the extra bacon slices and top with warm maple syrup.
