I’d be lying if I said I gave up frozen lunches when I started working at home. Working in the office in Chicago made frozen meals pretty much a necessity in my life if I wanted to save money, but even working at home, I still reach for a frozen meal once in a while because they’re easy and fast. I’ve probably tried every single frozen mac and cheese available to me. I just can’t help myself. One of my favorites is Amy’s Organic Macaroni and Cheese.

Sauce: The sauce is thick, cheesy and rich. Probably one of my favorite frozen mac sauces of all time. It doesn’t taste overly salty and it has a homemade sauce texture to it. The sauce browns a little in the microwave in the corners and makes that amazing almost-burnt cheese flavor when you stir it in. My mouth is watering just thinking about it.
Pasta: The noodles are classic elbows and are not overly mushy. They cook perfectly every time and the only time I’ve had them get a little too mushy for my liking was when I made it in the oven. I’d recommend sticking to microwave prep, for some reason it tastes better to me!
Overall: This is tied with my favorite frozen mac (shout out to Stouffer’s!) and it has become my Friday lunch go-to. I consider it a treat on Fridays because it is just that delicious. Also, note that they offer a Light and Lean version (which I’ve heard great things about), a lactose free, soy version and also a gluten free option.
Would I eat this again? Every Friday for the rest of my life!
