Did I ever mention that I’m really cheap? I have? Good. I love a good deal. I found this Jello Flan Instant Pudding Mix on clearance at Target and I could not pass them up.
I made some really amazing Vanilla No Bake Cookies last summer and decided it was about time I whipped up another batch. I used the 2 packets of pudding and only 1/2 of ONE of the packets of caramel that come along with the pudding mix. Save the other packet for something else! If you add both, the cookies will be too wet and won’t set.
Ingredients:
2 cups sugar
3/4 cup (1-1/2 sticks) butter
2/3 cup milk
2 (1.5 oz.) boxes of Flan pudding mix
1/2 packet of caramel sauce – included in the pudding box
3-1/2 cups quick cooking oats
1/2 cup semi-sweet chocolate chips – melted
Melt the butter and sugar in a saucepan and bring to a boil for 2 minutes. Remove from heat and add your oats, milk, pudding mix and 1/2 packet of caramel sauce.
Let cool for 5 minutes and then shape spoonfuls into cookie sizes of your choice on a wax paper lined cookie sheet. I let mine cool in the fridge to set them faster.
Before they are completely set, top with pecans.
Then, place back in the fridge to set completely.
Once set, take 1/2 cup of semi-sweet and microwave 30 seconds at a time until melted. Drizzle on each cookie and then place back into the fridge for the chocolate to set.
You could make this recipe with any pudding flavor. I’m dying to try Butterscotch! What flavor would you try?
