Easy Peanut Butter Fudge

Well, I am back from Hawaii! That makes me sound excited about it, I’m really not. It’s been kind of rough coming back to the city. And to the central time zone. Oh, and realizing I can’t suck down too many mai tais by the pool every day. Whining aside, I met some AMAZING people at the wedding. Ben’s sister married into a wonderful (Australian!) family and I feel really lucky to have met every single one of them.

Now on to more important things like FUDGE! I really cannot think of any thing else to say about this. I get super excited about fudge. And even more excited about a recipe that requires nothing more than a microwave. This recipe takes about 30 minutes total. I mean it. You could make this right now and be eating it in less than an hour.

No Cook Peanut Butter Fudge Ingredients:

4 cups powdered sugar
1 cup butter
1 cup creamy peanut butter
1 tsp. vanilla

Melt 2 sticks of butter in a microwave safe bowl and then add your peanut butter and vanilla extract.

Microwave again for 30 seconds and then stir until the peanut butter and butter are well combined.

In a separate, larger bowl, combine the powdered sugar and peanut butter mixture.

Mix (don’t be afraid to use your hands, they work best!) until you see no more powdered sugar lumps and then press into an 8″x8″, greased baking dish.

Cover the dish with foil and let it chill in the fridge for about 20 minutes tops, or just let it set up on your counter for about an hour. Then cut into cubes and eat as many as you can! For the record, my best was 13 cubes in one sitting. Just kidding! I’ll never admit how many I actually ate.

    • Hi Elizabeth, I haven’t ever had this turn out greasy – I’ve actually had the opposite problem a couple times where it was a bit dry! Did you use butter or margarine and did you use 2 sticks?
