This weekend I actually went out for once in my life. On Friday night, the BradsDeals office had tickets at a rooftop for the Bruce Springsteen concert at Wrigley. It was a blast. I mostly hung out in the bar (shocker) and not on the roof, because apparently Chicago decided to drop from 90 degrees to mid-60s within the span of a day. And NO, I didn’t dress for it even though I was aware it was going to be cold. Don’t judge me.
One thing you should know about me is that I am a hangover magnet, so let’s skip to Sunday!
Football season is now in full swing. I made the mistake of going to a CHICAGO bar to see if at least one, measly TV would actually have the Lions game because FOX decided to play freaking Rocky for us lowly Michiganders living in Chicago. No, there was no TV playing my game and yes, I had to listen to beer drinking, Urlacher-lovers cheer for Jay Cutler in all his chinless, interception-throwing glory. But, I digress.
Football day calls for PIZZA! I bought a couple loaves of french bread instead of crusts and made them up super quickly with a variety of toppings.
I am a black olive lover! Or as Jeremy at my office says, a “fake picky eater”.
I also bought some pepperoni. The kind you cut yourself.
I’m not a HUGE pepperoni fan, but I thought I’d try this. I can usually handle it if there are a copious amount of mushrooms present. And there were!
This was a super easy one. I don’t think an entire recipe page is needed. All you need is a loaf of french bread. I cut it into 4 pieces, coated it with melted butter and garlic and put it under the broiler (on high) for about 4 minutes. Then I coated each piece with sauce, one of them I even tried alfredo sauce!
Then you just top them with whatever you want! I used about 8 oz. shredded mozzarella, 8 oz. of mushrooms (sauteed in butter – until tender), 2 oz. of olives and a few slices of pepperoni.
While you’re topping them, definitely give your dog a little cheesy treat.
Then place them under the broiler again (on low, go ahead and let it cool down while you top your pizzas) for about 6-8 minutes or until the cheese is brown and they are fully warmed through.
If I wasn’t in a rush to make it to Petco before they closed, they probably would have looked a little prettier. But Molly’s birthday is tomorrow, so I had to go spend money on frivolous things for her! You can look forward to a post tomorrow to celebrate :)
