I eat like I am still 7 years old. So it is absolutely no surprise that I love a great grilled cheese. Now that I’m twenty-something (I’ll never admit to anything older than 22), I feel like the plain american cheese and white bread is just not cutting it. I want to make a grilled cheese that could actually be considered a meal.
In my latest attempt at this, not only did I add some turkey but, I also fried an egg into the bread. This was something I had seen done a few times before in some online recipes and I could not wait to try. I am a sucker for a fried egg on top of everything, especially if it involves a cheeseburger or corned beef hash… and now grilled cheese!
I used a glass to cut a hole out of a piece of sourdough bread.
Rather than buttering the bottom of my bread, I melted some butter in a pan and then placed the bread in. Once it has browned slightly (about 1 minute) break an egg into the hole. I actually broke my egg into a measuring up and then poured it in. Something about the spout on my measuring cup made me more confident about my egg-pouring skills.
Cook the egg until you can easily slide a spatula under it (about 1-2 minutes) and then flip your bread.
Add your cheese and turkey onto the browned side of your bread and then top with another slice of bread (I actually buttered the outside of the second piece of bread). Again, once you can slide your spatula under the egg without it sticking, flip your sandwich and let the other piece of bread brown and the cheese melt completely.
I cut mine in half because I am a fan of messy yolk all over my sandwich.
This would have been excellent with some soup, but I was just too hungry.. and quite honestly, it was filling enough on its own!
THIS IS MY DREAM SANDWICH. You’ve made me hungry for cheese, egg and bread and for corned beef hash since you mentioned it :)
