Goat Cheese Stuffed Peppers

This is one of our summer staple recipes. My friend Jenna visited once with her dog Wade for a puppy playdate and she brought the ingredients for goat cheese stuffed peppers to throw on the grill. I can honestly say that before then I had never even tried goat cheese, but I’ve been absolutely hooked ever since.

Like everyone else, we’ve been cooped up waiting for some nice weather to get outside and grill and it’s finally here! The first thing my husband through in his cart during his last grocery trip was the ingredients to make these! 

Goat Cheese Stuffed Pepper Ingredients

  • 1 lb. bag mini peppers
  • 4 oz. package of goat cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • Pinch of red pepper flakes

Goat Cheese Peppers Recipe

Cut the tops off your peppers and use a small paring knife to clean out the seeds as best as you can. Some peppers may not have any seeds, so just leave those be!

You can also cut the peppers lengthwise, but I feel that you can get more cheese in the pepper if you stuff the top instead, and honestly, I’m all about more cheese!

Get your goat cheese and spiced mixed together in a small bowl and use a small teaspoon to mix them. You can use the same spoon to stuff the peppers.

Place the peppers as upright as possible on a grill-safe mat or vegetable basket. We’ve also built little trays out of tin foil and that works just as well, too!

Grill at around 350-degrees on direct heat until the peppers start to soften and the skin starts to brown, about 5 minutes. Then move off of direct heat and continue to cook another few minutes until the cheese browns slightly. You may have some blackened spots on your peppers and that’s okay! They still taste great, I promise.

Remove from the grill and enjoy! We love to eat these with grilled chicken

  • Step 3 Use a small teaspoon works well to mix the cheese and spices and then use the same spoon to stuff the peppers.
  • Step 4 Place the peppers as upright as possible on a grill-safe mat or vegetable basket.
  • Step 5 Grill at around 350-degrees on direct heat until the peppers start to soften and the skin starts to brown, about 5 minutes.
  • Step 6 Move off of direct heat and continue to cook another few minutes until the cheese browns slightly.
  • Step 7 Remove from the grill and enjoy!
