My husband got an amazing deal on a grill last year after we moved in to our house. We were leaving for Michigan and I had all the bags packed and ready to go and he texted me to tell me he was running pretty late because he had to go to Target. Yes.. “Had to go to Target.” He is really bad at explaining things and I’m really bad at controlling my temper, so I wasn’t all that happy that he decided to delay us on our 6 hour drive with a stop at Target. Finally, he gets home and I demand to know why he’s so late. Turns out he saw online that some Target stores had put a $200 Char-Broil grill on clearance for $99. He bothered an employee until they went and checked the back and sure enough, they had one! So he managed to save us $100 on our very first grill! (ps. After making this ginger lime chicken, I forgave him for being late)
So, with Father’s Day coming up I thought I’d share one of my favorite grilling recipes for all those flame-loving papas out there! Plus, I’ve also got a Father’s Day gift idea for you to surprise him with ;) You can make this marinade for any kind of chicken or even for pork or steak. It’s got an Asian-style flavor and it’s super simple to whip up.
Ginger Lime Chicken Marinade
6-8 boneless skinless chicken thighs
2 Tablespoons olive oil
2 Tablespoon sesame oil
½ cup fresh lime juice
¼ cup honey
3 tablespoons soy sauce
4 cloves minced garlic
2 Tablespoons fresh grated ginger
3 Tablespoons Sriracha (optional)
1 teaspoon salt
½ cup minced cilantro
Get everything into a mixing bowl and mix well.
Place your chicken in a large seal-able bag and then pour the marinade over everything.
Zip it up and lay it flat on a plate in the fridge for 3-4 hours.
When you’re ready to grill you’ll just pop them on (our grill was between 350-400) and grill each side for 3-4 minutes until the temperature reads 165-degrees.
I like to douse them with a little more lime juice and top with some fresh cilantro leaves just before eating.
I also like to serve them with a really cold beer. And my Grilled Asian Style Brussels Sprouts.

- 6-8 boneless skinless chicken thighs

- 2 Tablespoon sesame oil
- ½ cup fresh lime juice
- ¼ cup honey
- 3 tablespoons soy sauce
- 4 cloves minced garlic
- 2 Tablespoons fresh grated ginger
- 3 Tablespoons Sriracha (optional)
- 1 teaspoon salt
- ½ cup minced cilantro
- Add oils, lime juice, honey, soy sauce, Sriracha, and salt to a bowl.
- Stir in your garlic, ginger, and cilantro.
- Add your chicken to a large zip-top bag and pour marinade over chicken.
- Be sure chicken is covered in marinade and lay flat in refrigerator for 3-4 hours.
- Grill ~350 degrees for 3-4 minutes per side until temperature reaches 165-degrees.
