I made this Marinated Mozzarella in the Spring to bring to a wine club and realized I should probably share the recipe! I attend a monthly wine club here in WV and each of us brings a dish to share. This particular wine club had an “appetizer” theme and we paired our app with a wine. I really like red wine, so I ended up bringing a Petite Shiraz to share. To be honest with you, the fact that I’m still not all that versed on wine and that I usually end up drinking so much that night, I can’t remember if they paired well together. If I don’t remember any complaints, it couldn’t have been that bad right?!
Marinated Mozzarella Recipe:
1 lb. fresh mozzarella – cut into small cubes (or buy the small, ball shapes)
1/4 cup extra virgin olive oil
1 tablespoon fresh oregano – chopped
1 tablespoon fresh thyme – chopped
1 tablespoon fresh rosemary – chopped
1 teaspoon red pepper flakes
Salt
Black pepper
Chop up your cheese into bite size pieces and get your herbs chopped up.
In a small bowl, combine olive oil, herbs, red pepper flakes and your salt and pepper.
Mix together and add your cheese.
Let sit in the refrigerator for 30-minutes to an hour and then serve with crackers and a few bottles of wine.
