So, Labor Day has come and gone. This makes me both sad and excited. Sad because it means summer is coming to a close, but excited because it means fall is coming and work will get super busy and fun for the holidays!
I was in Michigan yet AGAIN this past weekend for Labor Day and when I got home, I just wanted something super fast and easy to shovel in my face while I was unpacking and preparing for being back in the office. Julia has a tendency to send me the most IRRESISTIBLE Pinterest recipes while we are at work. Of course, anything mac & cheese related gets passed my way and this Miracle Mac and Cheese was a top choice for my next trial. (Check out Budget Bytes. Really, they have great looking recipes and amazing pictures!)
It was so simple, you just put the pasta in the milk.
Bring to a boil (only over medium/high heat) stirring occasionally. Then, reduce to a simmer for 10-15 minutes (mine took closer to 15) until the noodles are tender.
You’ll want to stir pretty frequently to avoid clumping, but always keep the lid on as much as possible to keep the moisture in. Once your noodles are tender, add your cheese.
Stir, and voila!
I loved the idea because you boil the pasta IN the milk (aka one pan and no strainer!) and as the milk cooks it thickens and gets kind of sweet. I liked the sweetness, but I think I could have gone with a little more cheese and a bit more cayenne pepper. Out of all the quick-and-easy-homemade recipes I’ve tried, this is by far my favorite. The noodles were a good consistency and the sauce mixed together well. The only downside is that it kind of dried out as I was eating it. I think next time I might make it a little runnier than I normally would, so that as I eat it becomes the right thickness.
*Note: I made this again (yes I was serious when I said I eat mac EVERY. SINGLE. DAY.) and I used more cheese (about 1/4 cup more) and also about a 1/4tsp. of cayenne pepper total and I added about 1/4 cup of extra milk AFTER I added the cheese. TO DIE FOR!
