Have you ever had quinoa? Have you ever tried to spell quinoa? I just did both of these things for the first time this week! As a side for our Saturday steak night, I made a mushroom and garlic quinoa that I absolutely loved. I’d been thinking about making something like this for a while because I’m trying to cut some pasta out of my life. I know, it’s so scary. I realized I was eating pasta every single day, sometimes twice a day. I am not saying this is wrong, I’m just saying I started to feel a little sluggish and wanted to try getting some different grains in my system.
Quinoa with Garlic and Mushrooms Recipe:
1 cup quinoa
2 cups water
2 Tablespoons extra virgin olive oil
1 Tablespoon butter
2 cloves garlic – minced
8 oz. sliced mushrooms
1/4 cup Parmesan cheese
Salt
Black pepper
First, you’ll need to rinse your quinoa and drain it.
After rinsing, add your clean quinoa to a saucepan with 2 cups water.
Bring to a boil and then cover it and simmer for 15-20 minutes, until the water is completely gone.
In a separate skillet, melt your butter with your olive oil and add your mushrooms and garlic.
Satue until your mushrooms are tender. Add your quinoa and parmesan cheese.
Stir to combine and serve!
I definitely like this as a substitute for a pasta side dish. I will be making more in the future!
