There are few things I like better than quick and easy vegetable recipes. When the weather warms up, I’m much more open to eating veggies with my meal and my favorite are definitely green beans. They are so easy! Sometimes I buy the kind you can steam in your microwave, then toss them in butter and salt, but when I find the fresh ones on sale I love to roast them in the oven. Add a little lemon, fresh black pepper and salt and you’d forget you’re even eating a green veggie!
Roasted Lemon Pepper Green Beans Recipe:
6-8 oz. fresh green beans – ends clipped off
Juice from half a lemon
1 Tbsp. olive oil
1 tsp. Salt
1/2 tsp. fresh cracked black pepper
Cut the ends off of your green beans and give them a good rinse in cool water.
Pre-heat your oven to 400-degrees.
Line a baking sheet with foil and spread your rinsed green beans in a single layer.
Coat with olive oil, salt and pepper. Then squeeze the juice of half of a large lemon all over them. I also had a few slices in the oven to keep the lemon flavor going while they cooked!
Bake for 20 minutes, until they just start to get a little brown and blistered.
Too easy right? You don’t have to tell anyone about that. They taste way more complicated, trust me.
