This is going to sound a little psychotic, but I have Mexican food EVERY. SINGLE. FRIDAY. I just can’t help it. Luckily for me, there is a Mexican place called Garcia’s right outside my apartment building. I mean it’s right outside. I’m looking at the neon margarita sign right now through my bedroom window! Lately my obsession is steak tacos, but before that I went through a chicken enchilada phase and I absolutely LOVE them with salsa verde. Since I can’t seem to stray from steak tacos at Garcia’s, I decided to make my own salsa verde at home.
Ingredients:
6 tomatillos – husked and rinsed
1 jalapeno – with seeds
1/2 white onion
1/4 cup chopped cilantro
2 Tbsp. chopped garlic
Juice from 1 lime
Peel the husk off your tomatillos. They will be a little sticky, just wash them off with cold water and a paper towel.
Chop them up into quarters and toss them in a large bowl.
Roughly chop your jalapeno, onion, cilantro and garlic and add to a bowl with the juice from a lime.
Throw into the food processor and blend until smooth. It will be a super light green color, but that’s okay. You actually have to cook it to get that pretty salsa verde color you see in the restaurants! Pour into a 2-quart saucepan and heat over medium heat.
Simmer for about 15 minutes until the color changes and the water reduces, leaving a thick salsa.
