This spaghetti carbonara recipe is deceptively simple. I make it that way on purpose because sometimes all I want to do is throw something easy together that tastes like I spent hours on it. This recipe has 4 main ingredients. Yes, FOUR ingredients. You will need some oil and salt and pepper, but hopefully you already have those on hand! I made this for lunch recently and that’s how easy it is. I’m at home working full time, with my husband and 8 month old and I was able to whip this up for lunch. You can thank me later ;)
Ingredients
- 1 lb. spaghetti
- 6 oz. bacon
- 6 large eggs
- 3/4 cup parmesan cheese
- Salt
- Pepper
Spaghetti Carbonara Recipe
- Get 5 quarts of water in a large pot on the stove to boil.
- Salt your pasta water very generously.
- While waiting for your pasta water to boil, chop your bacon into 1 inch pieces and heat in a skillet over medium-high heat until browned. About 2 to 4 minutes. Set aside on paper towel to drain.
- Also while pasta water is heating, crack all 6 eggs into a large dish. Whisk them with 1/2 cup parmesan, and a teaspoon of black pepper. Set aside.
- Once pasta water is boiling, add spaghetti and cook according to package directions. Likely about 8-9 minutes.
- When you drain your pasta, do it quickly. Don’t shake the pasta to remove all the water. Having a little water hanging onto the pasta will help make your sauce!
- Once you drain your pasta, return it to your pot and set aside OFF THE HEAT. This is very important.
- Slowly drizzle a small amount of your egg mixture into your pasta, stirring constantly. Continue to drizzle slowly until all of your egg mixture is combined with your pasta and it’s a creamy sauce.
- Add your drained bacon to your pasta.
- Taste and salt if needed.
- Plate pasta and top with the rest of the parmesan cheese. Enjoy!
