My very good friend Amber came to visit me in Chicago last week and I cannot even explain how great it was to see her. It is so easy to go months without seeing some of your favorite people, especially living in different states, but I am so lucky that all of my friends seem able to pick up right where we left off every time we see eachother.
Plus, she brought me a present! FRESH PICKED STRAWBERRIES. I cannot even tell you how great these taste to me this time of year.
I couldn’t help but eat a couple right away, but the rest of them I saved for this Strawberry Crumble recipe.
Ingredients:
2 cups sliced strawberries
1/2 cup old fashioned rolled oats
1/2 cup flour
1 cup brown sugar
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt
1/2 cup butter – melted
Preheat your oven to 375-degrees and grease the bottom of a 9″x9″ square baking dish.
Slice up your strawberries and place them in a single layer directly into your dish.
In a bowl, blend together the oats, flour, brown sugar, cinnamon, salt and nutmeg.
Add your melted butter to the dry ingredients and blend until everything stick together and is wet.
Crumble the oat mixture over the strawberries, with some strawberries still peeking through. You don’t want it to just be a brick of crumble.
Bake for 45 minutes, until it’s bubbly and brown.
Cool and serve with your choice of ice cream (I went for strawberry cheesecake)!
