Sweet Potato Hash

Sometimes I eat something I make and I say, “I think this is the best thing I’ve ever made.” This was one of those things. I am absolutely obsessed with sweet potatoes lately. We’ve been eating them baked in the oven and I decided to try something for breakfast. My dad used to make this breakfast hash after Christmas with the leftover prime rib (or on regular occasions with other meats) and potatoes and onions. It’s super easy and really involves chopping and just letting everything soften in a pan.

Sweet Potato Hash Recipe:

4 sweet potatoes – peeled
2 cups cubed ham (about 1/4 of a small, smoked ham)
2 Tbsp. vegetable oil
1 white onion – diced
1 tsp. season salt
1 tsp. smoked paprika
1/2 tsp. cayenne pepper

Cut your sweet potatoes into 1″ cubes.

Sweet Potatoes

Cut your ham into slightly smaller 1/2″ cubes. I used a pre-cooked ham and actually only used half of it for this recipe and the other half to whip up a batch of Potato Soup!

Pre-Cooked Ham

Toss the ham, potatoes, and onion into a skillet with the vegetable oil on medium-high heat. Let the sweet potatoes brown on each side then cover the skillet and let cook until the potatoes are soft and you can slide a fork through with no resistance (about 20 minutes).

I cooked an over-easy egg to throw on top!
