I mentioned before that I received this Absolut Chicago Vodka as a going away gift when I moved. Since I already covered a cocktail recipe, I decided to make a pasta dish with this rosemary and olive flavored booze and take my first stab at vodka sauce. I actually whipped this up for lunch and was surprised that it ended up being one of the easiest sauces I’ve made. A lot of people seem hesitant to make pasta sauces, but trust me IT’S EASY!
Pasta with Vodka Sauce Recipe:
1 Tbsp. butter
1 garlic clove – minced
15 oz. can plain tomato sauce
1/2 cup vodka
1/2 cup half & half
1 lb. cooked penne
1 small yellow onion – diced small
Melt your butter in a pan and add your garlic and onion once the butter is hot. Sautee until the garlic and onion are tender.
Pour in your vodka and cook to reduce by about half. Then, stir in your tomato sauce.
Stir in your cream and then add your cooked pasta. If it’s a little soupy, just let it simmer on low heat and work with the pasta to thicken a bit.
Top with parmesan and enjoy!
