Easter Leftovers: Baked Eggs + Ham

I hope you had a wonderful Easter! More than that, I hope you have tons of delicious leftovers. There is something magical about holiday leftovers. As in, I will actually eat them. I almost never eat the leftovers in my fridge. My boyfriend usually polishes them off, leaving me to enjoy a whole box of mac and cheese by myself (heaven on Earth). But holiday leftovers are a different story. I will eat leftover turkey, ham or prime rib for days! The trick to eating all of those leftovers is making something new with them. Sure, I like a plate of the holiday meal the next day for breakfast, but then it gets a little boring. For those Easter leftovers, I made baked eggs and ham and was anything but bored.

Baked Eggs and Ham Recipe:

*Serves 2
2 slices diced ham (it’s about 3/4 cup when it’s all diced)
4 eggs
2 Tbsp. half & half
1 tsp. thyme
1 tsp. rosemary
2-3 oz. swiss cheese – shredded
Salt
Pepper

Pre-heat your oven to 425-degrees.

Get all of your ingredients chopped, shredded and ready to make things easier to assemble.

Baked Eggs Recipe

Grease two oven-safe ramekins with cooking spray or room temperature butter.

In each ramekin, add half of your diced ham and 1 tablespoon of half & half.

Baked Ham and Eggs

Top with a bit of the Swiss cheese, salt and pepper. Then, crack your eggs into small dishes, making sure the yolks don’t break (this just makes it easier to transfer them neatly to the ramekins).

Pour two eggs in each ramekin and then sprinkled the rest of the shredded Swiss around the outer edges.

Bake at 425-degrees for 10 minutes, until the whites start to set.

After 10 minutes, turn your broiler on high and bake until the whites are just set (about 1 minute). Remove from the oven and let sit for about 5 minutes until the whites are completely set. Letting it sit will also make everything bind together, making it easier to eat!

    • Thank you Stephanie! I definitely think I’d make these again even without leftovers! I sometimes buy pre-cooked ham from my grocery store (it’s very small, maybe 1-2lbs.) and it’s really convenient :)
