Guest Post: Caitlin’s Snickerdoodle Bread

Caitlin is one of my fellow food-obsessed friends at the office and she’s been known to bring in some treats that make even a Monday morning tolerable. This Snickerdoodle Bread is probably my FAVORITE and I am so glad she shared this recipe! Snickerdoodle Bread

With the Super BeyoncC), I mean the Super Bowl, rapidly approaching, I am in the mood to whip up something delicious for our little party on Sunday. You already know that football means wings, beer, and DIPS on DIPS on DIPS. But if you are anything like me, then you know that your sweet tooth needs a little lovin’ too. I found this Snickerdoodle Bread recipe on Pinterest (via Lil’ Luna) in October. It is always a hit, and gets major bonus points for being so simple! Beware: One slice is NEVER enough!

Ingredients:

  • 2 1/2 cups flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 2 tsp. cinnamon
  • 1 cup softened unsalted butter
  • 2 cups sugar
  • 3 eggs
  • 2 tsp. vanilla extract
  • 3/4 cup of sour cream
  • 1 package of cinnamon chips
  • 3 tbsp. sugar
  • 3 tbsp. cinnamon
  • Betty Crocker Cookie Cream Cheese Icing (optional)

Instructions

1. Preheat your oven to 350B0 and grease loaf pans with butter. Cream together butter, sugar, salt, and cinnamon until light and fluffy
3. Add in eggs one at a time, and mix well
4. Mix in sour cream and vanilla
5. In a separate bowl, whisk together flour and baking powder
6. Gradually add dry ingredients into your wet ingredients, and mix until they are all evenly combined (be careful not to OVER mix!)
7. Fold cinnamon chips into batter
8. Pour batter into loaf pans until about 2/3 full (If you have mini loaf pans, this recipe will make 3-4 loaves. If you have regular loaf pans, this recipe will make 2 loaves.)
9. Mix together your 3 tbsp. of sugar and 3 tbsp. of cinnamon, then sprinkle on top of bread batter
10. Bake for 35-38 minutes

***Here’s my baking tip for you: All ovens heat up differently. Start your timer about 1-2 less than the recommended bake time. That way, you can make sure that you won’t over bake your goodies!

11. Let cool and serve!

Since the Super Bowl is all about football (Duh.) I added some icing “stitching” to my bread. This treat is so moist and delicious, but a little frosting never hurt anyone!
