Happy 4th! I’m having a hard time adjusting to being in Chicago for this holiday. Usually I’m in Michigan eating hot dogs, swimming in the lake, and trying to see how many s’mores I can consume. Since the holiday falls on a Wednesday this year, it didn’t make sense to head back. So, here I am trying to compensate by making enough cocktails to forget how much I miss trees and grass.
My dad visited this past weekend and his wife, Tami, LOVES sweet tea vodka with lemonade and I ended up buying a bunch of booze for their visit and now I need to figure out how to drink it all! I am also a huge fan of vodka lemonades and had some Peach Pucker leftover from my White Sangria, so I decided to mix it up a bit and make a Peach Tea Lemonade Cocktail!
Peach Tea Lemonade Recipe:
2 oz. Sweet Tea Vodka
2 oz. Peach Pucker
6 oz. Lemonade (recipe below)
Lemon slices for garnish
Lemonade Ingredients:
- 1-1/4 cups lemon juice (about 8 lemons)
- 3/4 cup sugar
- 3-3/4 cups water
Preparation:
- Juice all 8 lemons. I used a juicer, so I had to peel them all first, then put them in the juicer and let it pour into a measuring cup. You should have at least 1 cup juice to 3 cups water
- Warm 2 cups of water and pour in sugar, stirring until dissolved. The sugar will dissolve much quicker in warm water than in cold
- I strained my lemon juice, to avoid pulp in my lemonade, directly into the pitcher
- After the sugar has dissolved and the water has cooled, pour into pitcher with lemon juice
- Add the remaining 1-3/4 cup cold water to pitcher and stir
- Fill glass with ice and slices 2 slices of lemon
- Add peach pucker and sweet tea vodka to glass
- Top with lemonade, stir, and serve
Molly isn’t enjoying this July 4th much. Even her walks are cut a little short because its 103-degrees here in Chicago. Fingers crossed I can see some fireworks from the rooftop tonight and that Molly doesn’t get too scared and pee on the rug!
