S’mores Oatmeal Cookies

It has been a struggle to get in the kitchen lately. The main floor of our house is torn up so we can replace the old carpet and laminate with new bamboo flooring. I’m super excited for the final project, but the prep work is definitely not my idea of fun. Instead of being in the kitchen with a spoon at the stove, I’m hunched over a bunch of wood with a staple gun. The good news is that I’m learning how to do some new things, the bad news is my house is a work zone and I’m losing my mind. The only news that matters: pretty soon we’ll have a new floor and it will all be worth it!

I was able to keep my kitchen clean and dust free long enough to bake up some S’mores Oatmeal Cookies last week! I had some chocolate chips and marshmallows leftover from some cooking I did earlier in the month and wanted to use them up. I didn’t have any graham crackers, but I added some molasses and honey to my oatmeal cookie batter to create that flavor. These are sweet, chewy cookies with a great texture from some of the marshmallow that leaks out and hardens just a little bit. I like to sneak one with my coffee every morning!

S’mores Oatmeal Cookies

*Makes about 2 dozen cookies
1 stick unsalted butter – softened
1/2 cup brown sugar
1/2 cup white sugar
1 egg
2 teaspoons honey
2 teaspoons molasses
1 teaspoon vanilla extract
1 cup all purpose flour
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1-1/2 cups oats
1/2 cup chocolate chips
1/2 cup mini marshmallows

Pre-heat your oven to 375-degrees.

In a large bowl, whisk together your flour, baking soda, cinnamon and salt. Set aside.

In your mixer (or another large bowl if you’re going to use a hand mixer), add your softened butter and both brown and white sugar. Mix on medium speed until it’s light and fluffy. Add your egg, vanilla, honey and molasses and mix until everything is incorporated.

Add your flour mixture to the wet ingredients 1/3 at a time until, mixing on low, until everything is combined into a dough.

Fold in your oats, chocolate chips, and marshmallows.

Scoop heaping tablespoons of the dough onto a parchment-lined cookie sheet. The parchment is very important if you want to actually get your cookies off the sheet after baking! Top with a couple more little marshmallows. Bake for 10 minutes at 375-degrees until the center is just set.
