Waffle Breakfast Sandwich Panini

I’d been thinking about making this sandwich for quite a while. For some reason, I love a frozen waffle and I liked the idea of using waffles for a sandwich. I am also a total sucker for my panini maker because I HATE flipping sandwiches and risking the loss of all that delicious filling. I wish I had had this machine when I made my Grilled Mac & Cheese sandwiches, it would have made it a lot less of a nail-biter! Needless to say, this was a completely non-stressful sandwich situation.

Breakfast Sandwich Ingredients:

4 Toaster waffles
4 slices bacon
3 eggs
2 Tbsp. milk
Salt
Pepper
Cheddar cheese

I placed the frozen waffles on the panini press (with the lid down) on the low heat while I was cooking the bacon and eggs just to thaw them out.

Waffle Paninis

Take them off the panini maker as soon as they are slightly warm. Once the waffles are warmed, switch the panini setting to high heat.

To build your sammy, just layer the scrambled eggs*, bacon and cheddar cheese in between the warmed waffles. Cook them for 5 minutes on high heat and then enjoy your morning feast!

*I make my scrambled eggs by beating 3 eggs with 2 Tbsp. of milk and 1/2 tsp. each of salt and black pepper.
